Now equipped with nutritious, delicious Do Eat List

I’m not a religious guy, so when Green Goddess Natural Market co-owner/nutrition consultant Wynde Kate Reese suggested I switch to Ezekiel bread, I just thought it was bread with a funny name, not bread tied to religion.

So I bought a loaf — one with the blue label — but I didn’t read it until I got home. When I sat down to spend some quality time with my bread, to read the label, I noticed a white dove on the bag and a scripture name: Genesis 1:29. So I quickly checked my slip; I thought I bought the wrong bread. Nope, right bread.

After starting the Lake Placid Diet, a few people tried to convert me to their religion to help with weight loss —not in an obnoxious way, but a gentle, good Christian way. This bread got me thinking. What is Wynde really up to?

Then I read Genesis 1:29, and it made more sense: “Then God said, ‘Behold, I have given you every plant yielding seed that is on the surface of all the earth, and every tree which has fruit yielding seed; it shall be food for you.’”

I soon realized, after reading the ingredients, that Ezekiel bread is made from a lot of healthy stuff — 16 certified organic sprouted whole grains and seeds from all over the world — and that’s why it’s important to eat:

-Teff from the highlands of Ethiopia

-Black quinoa from the mountainous regions of Peru

-Barley from the ancient Holy Land

-Brown rice and spelt from the Far East

-Amaranth and chia from Central and South America

-Soy from China’s past

-Flax and rye from Northern Europe

-Corn from Old Mexico

-Millet and sorghum from the plains of Africa

-Sesame seeds from the Near East

-Pumpkin seeds from the Mediterranean

-Spring wheat and unprocessed bran from Montana

-Sunflower seeds from the Dakotas.

I wonder why there’s no pre-packaged salad mix called Genesis 1:30: “‘And to all the beasts of the earth and all the birds of the air and all the creatures that move on the ground — everything that has the breath of life in it — I give every green plant for food.’ And it was so.”

I’m serious when I say there are people trying to persuade me to accept Jesus into my life, and so far I’ve said, “Thanks but no thanks,” although I sincerely appreciate their concern. I’m approaching these offers with an open mind, so I’m not saying no forever, just not right now. I’m guessing a Lake Placid Diet column on religion is in order this year. Maybe in the spring, when it’s time for traditional Easter fare like ham, chocolate bunnies and Cadbury Creme Eggs.

In the meantime, I’m confident Wynde’s recommendation to eat Ezekiel bread was more about nutrition than religion. She put it on my Do Eat List when we met last week for a followup visit. And I’m glad she did; it’s delicious. I made a no-salt peanut butter sandwich with two slices for part of Saturday’s lunch (with a salad on the side).

Before drafting a list of 13 general suggestions for me, Wynde took into consideration a number of things, including my Adirondack Health nutritionist’s plan, a questionnaire I filled out, my weight-loss goals, medical afflictions (such as gout) and blood type (O). She does this for every Green Goddess nutrition client, and each plan is tailored to the individual. Here’s the list of suggestions for me:

1. Drink water with fresh lemon upon waking and throughout the day to reduce water retention.

2. Reduce or eliminate gluten from your diet.

3. Eat salad with/for lunch and dinner daily.

4. Eat only grass-fed meat and dairy products.

5. When you are feeling hungry, eat fresh fruit, unflavored nuts and fresh or cooked vegetables as a snack.

6. Drink green or herbal tea instead of coffee.

7. Make lunch your largest meal. Have a simple, light dinner, and eat it as early as possible.

8. Use Celtic or Himalayan salt rather than table salt. These provide essential minerals and promote heart health.

9. Eat Ezekiel bread. It’s high in protein, fiber and nutrients.

10. If you have a flare-up of gout, drink fresh juices — especially with celery, lemon, berries and other produce that is high in vitamin C.

11. Black cherry juice is great at neutralizing uric acid and can be consumed on a regular or acute basis.

12. Soak your grains before cooking them. Soaking makes them more digestible by activating their enzymes and converting their starches to protein.

13. To balance the “damp heat” associated with your constitution (based on the questionnaire), eat more raw, bitter and astringent foods and herbs such as ginger, turmeric, garlic, cilantro, cayenne, sprouts, celery and leafy greens.

Wynde also made some supplement suggestions, such as high-potency probiotics, a B-complex vitamin and bladderwrack, a seaweed that supports the thyroid and helps with cellular metabolism.

She gave me three physical activity suggestions:

-walk five or more times a week with periods of intense physical activity to reduce stress and facilitate weight loss;

-try yoga, which is beneficial for stretching the body, stimulating blood flow and relaxing the mind;

-and practice breathing exercises to tone core muscles, provide more energy and help with relaxation.

Wynde provided me with the following handouts: four different types of breathing exercises; suggested meals that balance fruits, vegetables, complex carbohydrates, proteins, fats and dairy; and several handy recipes, including flax oil salad dressing, a super smoothie, basic muffins, baked salmon, coconut chicken soup, two kinds of veggie dips and black bean brownies.

Soon I’ll be headed back to the Green Goddess Natural Market for a tour of the food aisles with Wynde so I can find these ingredients and for a cooking primer with co-owner Tammy Loewy so I can learn how to cook with my new Do Eat List.
